In the warm prawn and mint salad recipe in Jill Dupleix’s New Food: From the New Basics to the New Classics, you use two chillies. Yay, another dish that requires chillies out of the garden.
The recipe says serves four people for lunch but that would mean only three prawns each. For dinner, I used sixteen prawns so that we would have eight each and served it with rice. There is more than enough sauce to include more prawns if you need to serve more than two people.
Except, the long red chillies out of my garden must be hotter than those where the author made the dish as H had to make an emergency bowl of banana and yoghurt. The dish was tasty but warm in more ways than one 🙂
