red beef curry

We usually just follow the recipe on the curry paste can, but this Red Beef Curry recipe in The Cancer Council Western Australia‘s leaflet titled ‘A Festive Feast’ is delicious.

As well as beef, the dish includes red capsicums, English spinach leaves and pumpkin which make this red beef curry a little more interesting. The lemon zest or rind also adds to the flavour.

I mostly followed the recipe except that I just grabbed a can of coconut cream and did not use light coconut milk or the offered hint of low-fat evaporated milk and coconut essence.
