champagne sausages

Champagne sausages with spiced apples and shredded potato pancake have been favourites of ours since we first opened Jill Dupleix’s New Food: From the New Basics to the New Classics.

We have been getting the Mt Barker Free Range Chicken sausages from Clayton’s Quality Meats, but Trevor indicated that as soon as they have time, they will be making their own. This is all good. For years they have been known for their quality and variety of sausages.

The nice thing about the sausages is that they are poached in one cup of champagne – only. So make sure you buy a bottle of champagne that you like to drink. Last night’s bottle may have been a little too nice as it all got drunk as the cooks’ prerogative 🙂
